Preparation time: 15 - 20 mins
Cooking time: 20 - 30 mins
6 servings

6 cups of any combination of fresh vegetables, such as:
1 cup new baby carrots,scrubbed ( cut in 1-inch pieces)
1 - 2 cups small new potatoes
1 cup green beans or wax beans, trimmed (cut into 1-inch pieces)
1 cup broccoli
1 cup snap (snow) peas
1 cup new peas,shelled
1/4 lb, salt pork, diced
1 medium onion, coarsely chopped
1 cup whipping cream or sour cream
2 tbsp. butter
pepper to taste
1 tbsp. fresh parsley,chopped (1tsp. dried)
1. In a large saucepan, cook vegetables in approximately 2 cups of boiling water until tender. (Start with those requiring the longest cooking time and add the others so all will be tender at the same time. Do not overcook; vegetables should be bright in color)
2. Drain vegetables, reserving 1/4 cup of the liquid.
3. In skillet, fry salt pork pieces until crisp. Remove pork (scrunchions) and add onions to fat; sauté until tender and golden. Pour off most of the fat.
4. Add reserved liquid, cream, butter, and pork scraps. Place vegetables into heated serving dish. Pour cream and salt pork mixture over vegetables and sprinkle with parsley and pepper..
Served with a fresh fish or beef, this delicate-tasting dish was a pride of the farm.

Baked Beans

Soaking Time: 6-8 hours
Cooking time: 6-7 hours
6 servings

2 cups dried white pea beans
1 onion, chopped
1/2 cup salt pork, finely diced (or bacon)
2 tbsp. vinegar
1 tsp. salt
1/4 cup mild flavoured molasses
1/4 cup ketchup
1/2 tsp. dry mustard
1 tbsp. brown sugar
pepper to taste
1. Pick over and wash beans thoroughly. Soak beans in cold water overnight.
2. Place beans, and water in which they were soaked, in saucepan and simmer for 1/2 hour.
3. Place beans in bean pot or casserole dish; add all ingredients. Mix well. If desired, add some boiling water to cover beans.
4. Cover pot and bake in a slow oven at 250 deg F-300 deg F for 6-8 hours, removing cover during last 1/2 hour of baking.
5. Add boiling water 2-3 times to keep beans moist and covered with liquid; stir occasionally. Do not add water during last 1/2 hour of baking.

2 lbs. ground lean pork
1 lb. ground lean beef chuck
2 lg. onions, finely chopped
1 clove garlic, finely chopped
2 1/2 tsp. poultry seasoning
2 tsp. salt
1/2 to 2 tsp. pepper
1 tsp. celery salt
1/2 tsp. ground sage
1 c. water
3 med. potatoes, mashed
2 pkgs. pie crust mix

Combine pork, beef, onion and garlic in large heated skillet. Cook, stirring often until meats lose pink color. Stir in poultry seasoning, salt, pepper, celery, sage and water. Cover. Simmer 20 minutes. Uncover, simmer 10 minutes longer. Remove from heat. Stir in mashed potatoes. Cool. Prepare pie crust mix. Divide into fourths. Put crust into 9-inch pie shell, spoon half of cooled meat mixture into shell. Fold over edges of crust. Brush with egg. Put on top crust. Trim. Brush with egg. Cut slits in middle. Repeat for second pie. Bake at 425 degrees for 15 minutes then reduce heat to 350 degrees and continue cooking for 25 minutes. Bake and freeze or serve right away. Makes two pies.

1 Large Onion, chopped
4 Tbsp. Butter
4 Large Potatoes
2 Cups Hot Water
3 Cups Lobster Meat, cut in chunks
4 Tbsp. Butter
1 Tbs. Salt
1/2 Tsp. Pepper
1/4 Thyme
2 Tbsp. Parsley, freshly chopped
3 Cups Light Cream
2 Cups Milk
In a deep skillet melt the butter and sauté onion until tender. Add potatoes, water, salt, pepper, thyme and parsley. Bring to a boil. Turn down heat and simmer for approximately 15 minutes until potatoes are tender. Sauté lobster in additional butter and add to potatoes mixture. Add heated milk and cream. Combine well, re-heat but do not boil..

Serves 8

Fish Chowder


2 tbsp butter
1 onion, fine chopped
1 stalk celery fine chopped
1 potato diced
1½ cup fish stock or water
1 lb chowder mix
1 pt coffee creamer mixed with a ¼ cup flour
Salt to taste and plenty of pepper

Melt butter in sauce pan add onions & celery, simmer until soft. Add fish stock or water and diced potato. Cover and simmer until potato is just tender. Add fish pieces and boil for another 3 minutes, stirring constantly. Add cream & flour mixture, and heat over medium heat for about 7 minutes. Reheats well.

My meat pie usually is a mixture of 2/3 beef and 1/3 deer meat. I also make this pate with chicken cooked the same as the rabbit. (remove the bones)

1. Cook Rabbit or Beef:

1/2 cup salt pork (chopped very small)
1 medium onion (chopped small)
2 pair rabbit or 4 lb.. lean beef
salt and pepper
Fry pork and onions in large pot. Remove from pot and set aside. Brown Meat, add pork and onions and add enough water to cover meat. Add salt and pepper to taste. Cook on low heat for about 2 hours or until meat is falling of bone (rabbit) or very tender (beef). Add water if the level goes below the meat. Remove meat from liquid. Set the liquid aside for the crust. Leave a little liquid in the pot and thicken it with corn starch. Remove all the bones from the rabbit meat. Place the meat back in the pot and simmer until thickened. This will make the pie juicer.

2. Pie Crust:

8 cups flour
3 tbs.. salt
6 tbs.. baking powder
1 lb. shortening
about 2-3 cups meat liquid.
Combine all ingredients in a large bowl. Cut shortening into flour mixture. Add the liquid from the meat to the mixture until it is moist. You may have to add water to the liquid if you don't have enough. Adding the meat liquid to the pie crust gives it a special flavor and makes the crust look brown. Roll the dough on a floured board and place in a rectangular pan. Add meat. Cover with remaining dough. This pie crust should be thick because when the pie is cooled it will be cut into small pieces and steamed in a steamer. The dough will puff up and become very moist.

Apple Crisp
Preparation Time: 30 mins
Cooking time: 30-40 mins
6-8 servings

6 cups apples, peeled cored and sliced
1/2 cup brown sugar, finally packed
1 tbsp. lemon juice
1/2 tsp. cinnamon
1/2 cup flour
1/3 cup butter
1/2 cup brown sugar, finally packed
1 cup rolled oats, old fashioned
1/2 tsp.cinnamon
1. Preheat oven to 350F
2. Combine apples, sugar, lemon juice, and cinnamon, and place in buttered 6-cup baking dish or 8-inch square pan.
3. Place flour in mixing bowl, add butter and rub or cut in until mixture resembles breadcrumbs. Add sugar, cinnamon, and rolled oats and rub well into mixture. Spread mixture over apples and pat firm.
4. Bake at 350 deg.F until apples are tender and topping is brown. Serve warm with whip cream, custard or ice cream.

Variations Apple-raisin-- Add 3/4 cup of raisins to apples. Blueberry-- substitute 6 cups fresh or frozen blueberries for apples. Rhubarb--Substitute 6 cups cut up rhubarb for apples, Replace 1/2 tsp. cinnamon with nutmeg.
Serve warm with ice cream oor whipped cream.

Hey, can a former New brunswicker add a recipe to this thread???!!!

Here is my favorite Chili Recipe

1 1/2 lbs. hamburg ( all beef or half beef/half pork)
1 large onion
1 medium green pepper
8 oz. mushrooms
1 small can tomato paste
1 small can tomato sauce
1 28oz. can red kidney beans
1/2 to 3/4 bottle Heinz chili sauce
1 can or bottle of Lagar beer (most times, I use Molson Canadian)
Dash of hot chili sauce

In a pot, cook meat, onions, green peppers, mushrooms til meat brown. Add salt and pepper to taste.
Then add tomato sauce, tomato paste, kidney beans. Stir til well mixed.
Add beer.
Cook over simmering heat for at least 2 hours, adding the hot chili sauce about half way through the cooking.

P.S. I sometimes mix red peppers and green peppers.
To make a bigger batch, add more veggies and Heinz chili sauce.

The longer you let it cook, the better the chili sauce will spice it up.
If you can, do it around lunch time and let it simmer all afternoon for best results!

Hamburger Soup :D
SERVES 10 -12 (change servings and units)

1 1/2 lbs ground beef
1 onion, chopped
1 (28 ounce) can tomatoes
2 cups water
1 (10 ounce) can tomato soup
1 dash parsley
4 carrots, chopped
3 stalks celery, chopped
1 bay leaf
3 (10 ounce) cans consomme (or 2 beef bouillon cubes in 2 cups hot water)
salt and pepper

1Brown meat and onions. Drain well. Combine all ingredients in a large pot. Cook at least 2 hours or use crock pot and cook up to 8 hours.

Hubby's Peanut Butter Balls

This is so yummy and takes little effort.

2 cups peanut butter (crunchy or smooth)
1/2 cup butter
4 cups confectioner sugar
3 cups crisp rice cereal
2 cups semisweet chocolate chips

Melt peanut butter, butter and chocolate chips in a saucepan over low heat. In a large bowl, mix crispy rice cereal and confectioner sugar well. Pour melted butter, peanut butter, and chocolate over cereal and sugar. Blend thoroughly.

Form into any size ball you want and chill in the fridge until firm.
