USABABE's Homemade Potato Soup

Hey all, here's a potato soup I made up today....turned out pretty good :O

in large saucepan, boil 1-1/2 to 2 cups water plus 3/4 white onion, chopped,w/ 1 can cream of chicken soup (low sodium, etc is okay) & 1/2 cup milk

-add 1 finely chopped zuchinni (i left the skin on it)
-3 medium/large red potatoes, chopped (peel em or not, i peeled 2 and left the skin on one)
-dash of salt & pepper to taste
-2 tbsp flour (mix it in the soup well to avoid clumps)
-dash of rosemary

basically, let this simmer about 30 min or until potatoes cooked, then puree and return to boil for a few minutes and add real bacon or bacon bits

when it's done, add shredded cheese and/or sour cream

enjoy!

Sounds great, except the zucchini...otherwise with the bacon and sour cream, it's just like a baked potato!

Try substituting the bacon for spicy sausage. :D

yeah, you could also add corn or shredded carrots if you want--possibilities abound.
