|In BC we have single desk selling in the apple industry and thank heaven we do, the system works just fine. The agricultural sector will have to form entirely new ideas for marketing transportation and so on and the only way they can do that is to consolidate.
Single desk selling is only one part of the system and when you open things up there could be all kinds of problems. New Zealand allowed multi selling agents in recent years and now are going back to a smaller playing field. The reason quality control, and profitable distribution.

University of Guelph (it started as an ag college), U of Sask., U of Alberta, plus a pile of regional colleges (off the top of my head). Not sure about the east coast, but I'm sure they have their fair share too.
A lot of the programs focus on animal husbandry, soil conservation with some research into soil development (effects of different forms of farming/tillage on soil development). It crosses into the sphere of forestry and environmental sciences so most Universities with one program tend to have the others.
As well the feds have research stations for crop development and other related topics located in every province. Some provinces go into this as well, but it becomes more of a regional political football.
