Looking for a good tried, tested and true rub for ribs...both pork and beef. We're doing ribs next weekend for the back to school party for staff. Unfortunately they won't be smoked, just grilled, as our smoker is away on a three month, all expenses paid excursion, courtesy of her majesty's counsel.

1 tbs fresh ground black pepper
1 tsp cayenne
2 tbs chili powder
2 tbs ground coriander
1 tbs brown sugar
1 tbs dry oregano
4 tbs Spanish paprika (Smoked, if you can find it!)
3 tbs kosher salt
1 tsp ground white pepper
Rub the meat, and leave covered in a fridge overnight.
I usually go heavier on the sugar and cayenne. Use smoked paprika or liquid smoke if you aren't going to smoke the meat.
