Cooking food in a plastic bag sounds like an unhealthy way to prepare food.
As long as you're using food grade bags, currently, there is no issue. If someone were that worried there are ways to do it in mason jars, but that wouldn't work very well for meat typically.
You should try things like Swordfish or Lobster in sous vide. (but kill the lobster first!)
There is also a technique developed by Ferran AdriĆ which seems simple but is pretty cool. Take an egg, crack it into some plastic film and tighten the film so there is no air. Immerse the egg in almost boiling water for about 6 minutes.
The egg comes out almost like cheese in it's texture, but with a runny yolk. Great in Eggs Benedict!
