Vegetarian thread.

Vegan:strict vegetarian ,avoids all foods of animal origin including fish, dairy products and eggs.

Lacto vegetarian: consume dairy
Lacto ovo vegetarians: include eggs with the diet.

Pesco vegetarians eat fish, dairy products . Deemed the healthiest of the "vegetarian diets"

Semi vegetarians are cheaters... :wink: they will eat poultry and fish from time to time.

Now ..Over night my daughter became a pesco vegetarian... dinner of meat and potatoes was "pooched" so in a pinch I created this..


1 Pkg Primo Lasagna.(oven ready will not work and any other brand will shred)
2 lbs Baby carrots
1 uber large cauliflower cut into flowerettes
2 heads Broccoli cut into flowrettes
3 pkgs Knorr Creamy Garlic pasta sauce (just follow the package instructions plus 2 cups of milk
1 / 600 gram bar of marble cheese (shredded)
Food processor is handy at this point.
and last but not least...about 8 slices swiss cheese.

Vegetable lasagna:

Boil lasagna. (duh) :P
When al dante..drain and soak in cold water to stop expansion.
When cold... drain.

In this order:
In a 4 litre dutch oven type pot..
(something big to boil stuff in....)

2lbs baby carrots.
Top of with water and bring to boil on high.
Once at a boil ..reduce to high simmer
Add cauliflower.
(while this is going on... I would start on my Knorr sauce)
After about under ten minutes.. add broccoli...
Reduce to low simmer until broccoli is "forkable" yet still crisp.

Remove from heat and drain..(dont' for get to toss too )


In uber large lasagna pan..
4 strips lasagna
A quarter of the veg mix
A quarter of the shredded cheese
2 slices of the swiss broken up into small pieces..
About 2.5 cups sauce dispersed as evenly as you can.

Repeat layers until you run out of schtuff.
Use up whatever is left on last layer.
Bake in preheated oven at 350 farenheit for about an hour or until you REALLY.. smell lasagna.

Prep time: under 45 minutes..
Bake time: 1 hour
Dishes : you'll find out.

Sounds great... Lasagne is one thing that I love, but haven't had the courage to try to make myself. I just might have to start, and give this one a shot!

sounds good lily (doh! Erinites...I guess I miss Lily). i'm not a vegetarian, but here's a quick and simple side dish

peel some sweet potatoes
cut into sticks (for "french fries")
spray with cooking oil
place on non-stick baking sheet and sprinkle with just a little salt & pepper
bake about 10min or until tender

Tuna would work well in that dish too.

Got stumped yesterday as to what to make for
You will need a ridiculously large lasagna dish for this one.
I used my turkey roaster.

balsamic vinegar.
1 540 g bar of marble cheese , shredded.
1 pkg shredded parmesan
1 pkg oven ready lasagna

1 chopped onion
Chopped celery to taste.
I 680ml can of pasta sauce
1 796 ml can of diced tomatoes
Season as you like.

Sautee celery and onion till softened .
Add tomatoes,sauce and seasonings.
(I grow my own basil)
Simmer for about ten minutes.

1 small eggplant, sliced.
2 pkgs sliced mushrooms
1 red,yellow,orange and green pepper seeded and sliced.
2 medium zucchini, sliced.

You need not cook any of the veg as the juices of fresh cut help soften the lasagna pieces and add to the flavour.

In pan, start assembly..

5 piecesof lasagna.
eggplant, drizzled with balsamic vinegar, 3 ladles of the sauce and then some of the cheeses.

5 piecesof lasagna.
sliced mushrooms drizzled with balsamic vinegar, 3 ladles of the sauce and then some of the cheeses.

5 piecesof lasagna.
peppers drizzled with balsamic vinegar, 3 ladles of the sauce and then some of the cheeses.

5 piecesof lasagna.
zucchini drizzled with balsamic vinegar, 3 ladles of the sauce and then some of the cheeses.
last layer (you should have about 4 pieces of lasagna left)
lasagna pieces, remainder of the sauce and top off with the rest of the cheese.

Bake covered at 375 degrees for about 40 minutes, remove lid and bake some more until cheese is golden...(about another 10 minutes.)

Feeds 8 teenagers with some leftovers so the parents can eat.:wink:
