When Friley opened in 2012, he said he was paying about $50 US for a gallon (3.79 litres) of vanilla extract. Now, he is paying at least $550 US for the same amount. Recently, that's converted into $750-$800 Cdn, due to a falling Canadian dollar.

Not just local ice cream makers want to stick to the natural ingredient, which many say has a better taste than artificial extract. It's even used to add creaminess to chocolate, Friley noted.
Either way, it's out of the hands of small shops.
"The problem is, what do you do about that homemade pie?" Friley said. "There's nothing better than a scoop of vanilla ice cream on homemade pie."
Well this sucks.
Given the sudden and outrageous price hike it makes a person wonder if Martin Shkreli didn't buy up all the Vanilla companies?

Also, vanilla is $8 for 16oz at Costco here in Sacramento.

That's one of the long ago predicted effects of Global Warming. Which is called 'Climate Change'.
Just as cooling on the northern continental land masses is what was predicted too.
Thanks for reminding me that all temperature variations are caused by man-made global warming.

Vanilla ice cream is well...vanilla.
It stinks that it's going up in cost, but everything these days is, so just open your wallet and stop bitching already.
It costs $600 CDN to get a 4 x6 roof top greenhouse delivered to your door. More then adequate to grow them here.
Order the started plants from a reputable seller, and learn how to pollinate. Enjoy your vanilla.

Artificial vanilla extract is good enough in baked goods (at less than one third the price), but you need the real stuff in ice cream.
