Natives eat it, but it's not exactly a 'staple' food. More like you want the pelt, its edible, you got 6 kids and the meat was free with the fur.
Every non-native I've ever met who said it was good rolled their own, had the holes in their gumboots duct-taped and hadn't had their monthly bath...
AFAIC bear, lynx (tried a nibble at game club) are like sea urchin, sea cucumber. Yeah you can eat them but a can of no name Spam tastes 1000% better.

I've never tried bear but in my dad's family, they hunted bear and ate the meat when he was young. I don't remember him telling me if it was any good, though.
I have no problem with people hunting wild animals. On the condition they get the same tools the animals have. The cougar in question had teeth and claws, If the guy went out with his teeth and his fingernails i call it a fair fight

Plenty of lynx here, none of my native friends ever ate them. Cougars only entered this area about 20 years ago.
Lot of moose eaten here. So much so a lot of people roll their eyes "moose again?" like the wife and I do with salmon. My Dad worked at BC Packers, the wife is from Terrace on the Skeena. Traded our salmon sandwiches for peanut butter in school a lot...

I always found bear to be inedible. You had to spice the crap out of it so it didn't taste like a greasy dirty diaper. A friend of mines' dad had a recipe for summer sausage that mixed bear, moose and beef that was actually really good. But he just hung it in a cooler, and if it wasn't very humid the sausage would dry out and the core would get botulism.
California banned the hunting of mountain lions (aka cougars) in 1991. Their populations have grown so much that it's now not unusual to see them in urban areas.
And now the state's naturalists are all wondering why our native deer and elk populations are being reduced.
It's a total fucking mystery. 
Gosh how did all these animals manage to survive for millions of years without humans to micromanage their populations via licensed hunting?

Banning the hunting of predators allowed for their population to increase but that led to a corresponding decrease in prey populations.
See, this being California there was a mistaken belief that
enlightened mountain lions would be vegetarians.
What I’m saying is predator and prey populations naturally find an equilibrium. If predators kill too many prey then they run out of food and the predator population crashes also, which then helps prey populations recover. And round it goes. No human intervention required.
Imbalances are usually caused by human activity and habitat destruction.

Harper’s response provoked reactions online ranging from support to surprise at such blunt language from the wife of a former prime minister.
“Laureen? I honestly must admit, I never expected you to speak so boldly. Luv it!” wrote one user.
Another said, “Laureen! Who knew you were such a badass?”
Harper responded to a user who worried her account had been hacked, writing “Wasn’t hacked. I was really angry that some guy flies all the way to Alberta to kill a magnificent cougar, so he can make a stir fry.”
