Sunderlands were so good in their anti-submarine role that they were the primary reason by 1942 that the U-Boat guys in the Kriegsmarine started saying "um, we're going to need some bigger AA guns on the topdeck".

Late-variant HE-111?
Very close. Can you tell what kind of engines those are? If so, that will narrow it down to which exact model it is.
Hard to tell. The early to mid HE-111's also had air intakes on the top of the engines, which this one in the pic doesn't appear to have, to go along with the lower ones. And their lower intakes were set further back, more underneath the wing as opposed to the openings being almost flush with the propellers, unlike the one in your picture. Definitely Heinkel landing-gear though. And, obviously, the trademark no-protection-whatsoever Heinkel fuselage canopy and nose.
You are right. It’s an He-111. But it’s the Spanish variant, the Casa 2.111 with the Merlin engines, not the Jumo 210’s.
German plane with British engines? As per Monty Python it probably has to suppress the urge to start goose-stepping during tea time.
